Just spent nearly 2 hours in a shop near where I work yesterday. One of these shops that has been around for 20+ years and doesn't throw anything away.
Although they don't really know what they have got, don't expect to pick up any "bargains" If they have what you want you can expect to pay the going rate, which is why I walked away with nothing 'cause I'm skint.
Here are a few examples of what I saw from memory:
NOS M900 headset
NOS USE post (no top parts just post)
M952 rear hub with qr
Numerous nos wheels hanging from ceiling M737 hubs, M570 hubs etc
Some hubs in a box, complete and parts nos and used M563, M570, STX whatever model number they are
nos Haro estay complete bike!
nos Panaracer Spike tyres amber wall
Ok that's all my brain can recall. Here is the deal though, this is a shop owned by a woman and her husband with a number of staff, and not all know what they have in stock, so please don't bombard them with phone calls unless something in my list interests you. If you want to have a rummage I am sure they would welcome the visit, but they may not give you a price there and then, so be prepared to call back.
The shop is really quite small and is called Cycleman and is in Ahford Middlesex.
Hopefully this can help some of you out and them too as they are really nice people once you get chatting, they took me out the back, let me go through a couple of boxes just to see what was in there, and I got the old man's life story and discovered that they have an old Mavic BB cutting tool which they are happy to use if anyone needs work doing.
